LITE EGGPLANT CAPONATA

INGREDINTEN:
• 1 Eggplant
• Container of Cherry Tomatoes
• 1 Purple Onion
• 1 Tbsp Pine Nuts
• Tomato Paste
• Contemporary Basil
• Olive Oil
• Balsamic Vinegar
• Garlic Powder & Crushed Garlic
• Sea Salt

INSTRUCTIONS:
• Dice your eggplant and lay out on a chopping board
• Drizzle with sea salt and let sit for about an hour then rinse and pat dry (can skip this step if you’re in a rush)
• Add your cubed eggplant to a bowl. Halve your cherry tomatoes and add in. Season with a drizzle of olive oil, garlic powder, & sea salt
• In a big skillet frivolously toast your pine nuts then take away from the pan
• Thinly slice your purple onion then add to the pan to sweat. As soon as translucent add a tbsp of balsamic vinegar and let prepare dinner till caramelized (stirring often)
• Whereas your onions prepare dinner, add your eggplant and tomato combo to the air-fryer and air-roast at 375 levels for 15 minutes (combine each couple of minutes to ensure it’s cooking evenly)
• Add 2 cloves of crushed garlic & a few tbsp of tomato paste to the pan with the onions. Mix effectively
• Add the tomato & eggplant + the pine nuts again to the pan and blend collectively. Add a lightweight drizzle of olive oil and a tbsp balsamic vinegar
• Combine in a beneficiant handful of recent basil & mix effectively
• Add to a bowl & high with a drizzle of balsamic glaze (elective)
