I’m at all times making an attempt to sneak extra veggies into my meals & this dish is not any exception! Good for an evening while you aren’t within the temper for meat or for those who eat a plant-based weight-reduction plan 💯

• 1 eggplant
• 1 container of cherry tomatoes
• half of crimson onion
• 1 tbsp tomato paste
• 1/four cup cooking wine or white wine
• 6 cloves of crushed garlic
• Olive oil
• Dietary yeast
• Sea salt
• Garlic powder

• Preheat oven to 425 levels
• Minimize your eggplant into small cubes
• Roast your eggplant & cherry tomatoes (go away complete) on a baking sheet for approx 45 minutes – combine as wanted
• Whereas veggies are cooking, thinly slice the crimson onion – add to a pan & sweat out by including water, masking, & cooking on medium to excessive warmth. Repeat till onions are translucent
• Add the cooking wine, tomato paste, crushed garlic, & approx 2 tbsp olive oil to the onion – proceed cooking on medium to low warmth
• Now prepare dinner your pasta (I used fibergourmet linguine) & reserve about 1/four cup of pasta water
• As soon as veggies are roasted, add to the pan
• Add the pasta & reserved pasta water in
• Mix properly & sprinkle in dietary yeast
• Add sea salt & garlic powder to style
• On the finish, add a further drizzle of olive oil & mix properly
• Add to a bowl & prime with basil 🌿
